If Something Can Go Wrong, It Will

Our kids don’t often get time off from work to come home for Thanksgiving. This year, we are looking forward to having them here for a home cooked meal. Eagerly awaiting their visit, we decided to get a new Samsung stainless steel, French door refrigerator. Our beige one was years old and didn’t even have a water filter. A new one would be healthier with filtered water and would match the other appliances we have already replaced.

The delivery was scheduled for last Saturday, while I was at a bridal shower with my cousins.

We had a great time, and I drove home anticipating seeing our beautiful new Samsung refrigerator, assuming all had gone well with my husband in charge.

And here’s where things went afoul. He said the freezer temperature, set at 0 degrees, wasn’t dropping. It was staying steady around 68. Bad news.

By now it was dark out. I snatched the phone and called customer service for the Best Buy extended warranty. After ascertaining the appliance wasn’t in demo mode (where it lights up for store display but the cooling apparatus doesn’t work), the agent scheduled service for Tuesday morning.

Tuesday! This was an emergency. A brand new appliance wasn’t working properly, and it’s before a holiday. I have not bought a turkey for Thanksgiving yet. I dare not buy one until this problem is diagnosed. I have to tell you that we were disappointed in this delayed response.

The green beans that were in the freezer defrosted and I tossed them out. Regarding all the appetizers I’d planned to serve our kids, we have cooked them and are eating them as we go–mini quiches, spinach and cheese stuffed mushrooms, parmesan potatoes and more. Thankfully, I hadn’t kept any large meat packages in the freezer.

As for Thanksgiving, I’m afraid to get a turkey until the serviceman gives his verdict. I also want him to check the refrigeration unit to make sure that part is adequately cooling. I stuck a couple of wine bottles in there and they got cold, so hopefully that section is okay. Still, if we need a replacement, who knows when they’ll schedule it to arrive. After installation, it takes 24 hours for the appliance to get up to speed. I think I’d wait until after Thanksgiving so we don’t lose the stuff in the top section.

So after he tells me what’s what on Tuesday, I will either buy a fresh turkey, if any are left, or an already cooked turkey breast. We are fortunate to have one of those mini refrigerators in our laundry room, crammed with all our perishables from the old fridge. I could possibly make room for the poultry but not much else. As for the green bean casserole, I’ll get the beans from Winn Dixie on Thursday morning if available. I have the sweet potato ingredients and can make that from scratch on Thursday too. But then, where to put the leftovers?

We are unsettled by this disruption to our routine, not like after a hurricane when you might expect a power failure. You don’t expect a new machine to have a major failure. The Best Buy warranty service should have sent someone out immediately this morning instead of making us wait. Keep watch here, and I’ll let you know the outcome in the Comments section.

Hey, I can count this as one of my holiday disasters. The only other time something bad happened was when the dog ate my broccoli cheese casserole prior to a family gathering.

We’ll eat out if we have to for the rest of the weekend. Being together is what matters.

History of Food Sources in SE Florida

What did the early peoples of southeast Florida find to eat? Recently, Michelle Williams from the Florida Public Archaeology Network gave a talk about “Weeds and Seeds: Dining on the Riches of Southeast Florida.” Any errors in this report are due to my interpretation.

She mentioned how the early people build pyramidal shaped mounds as symbols of power. About 2000 years ago, papaya could be found here, although it probably came to these shores via bird poop. Zoo archaeology is examining animal bones to study our history. She is a paleoethnobotanist. This discipline studies plant remains to understand how people lived.

In southeast Florida, we have environmental interfaces where there’s an overlap of more than one type of ecological environment (if I understood this correctly).

The Everglades has tree islands. The trees there have a specific orientation in a teardrop shape based on water flow. Every island has evidence that people used to inhabit the land. Animals lived there, too, and provided food. Plants and trees provided wood and other resources including a type of flour. Among other things, people ate tubers, alligator meat, fish and birds.

Another environment here is the Ocean, including the ocean’s edge and mangrove swamps. There people ate conch, dolphin, seaweed, seagrapes, and cocoplums.

Another system includes Rivers and river banks, with turtles, fish, muscadine grapes and prickly pear cactus.

Lake Okeechobee is another region with snakes and fish. Catfish was popular there and now it’s bass. Elderberries and other plants grow there. The Kissimmee River feeds Lake Okeechobee, and this in turn feeds the Everglades. So Southeast Florida had hunting and gathering but no agriculture. Yet the abundance of plants and animal life supplied enough provisions for these early peoples.

Some of the current problems are Burmese pythons in the Everglades, giant African land snails and green iguanas.

We had visited Disney’s Fort Wilderness Resort years ago and then only for the musical dinner show. So we were pleasantly surprised to find the entrance just beyond Golden Oaks on Vista Blvd., less than 15 minutes from our condo. You park at a visitor lot after checking in at the gatehouse (we always say we’re going to eat) by the Outpost registration building. Here you have to catch a bus to take you to the rest of the place. Guests either bring their own RV to the campgrounds or rent a log cabin, fully stocked with modern amenities and kitchen facilities. These sites are interspersed among a vast property filled with tall trees dripping with Spanish moss. It’s a lovely setting, like entering a nature park.

Our first stop at the Settlement brought us to Trail’s End restaurant where we had lunch a la cart. I wasn’t thrilled with my vegetable flatbread. It seemed to consist mostly of arugula, diced tofu, and balsamic vinegar with other undefined chopped morsels. And it was too spicy for my taste. I’ve had better flatbreads at other places. The burger or a salad might be a better choice here. The cornbread side is a good item. There’s an adjacent tavern that presumably only opens at night. Other meals at Trail’s End are a buffet breakfast and buffet dinner, and reservations are recommended. The rustic atmosphere is fun and so is the overly cheerful waiter who greets you with a “Howdy.”

Located in this district also is the musical revue and a nighttime barbecue, both in separate locations. The revue is indoors while the BBQ has outdoor seating under a roof. Further along is a broad lake with a beach that has lounge chairs, fishing, boating, and playgrounds. It’s like being at a park.

We took the bus next to Meadows Trading Post, a combo souvenir shop and grocery. Beyond is a big pool with water slide and nearby kids’ playground and tennis courts. We wandered around here looking for walking trails and got plenty of exercise strolling down the shady campground lanes.

With all the activities, including carriage rides, horses, and a petting zoo, this would be a great place to stay with children. The only downside is the limited dining. You’d have to eat out at the other theme parks before returning to the campsite each night because you might not want the buffet more than once. Otherwise, this park is peaceful and rustic and a lovely place to enjoy the tranquility of nature.

Today was overcast and hot so I couldn’t eat much in the heat. Only made it to two places again but the portions were generous and I wasn’t hungry after the hearty dish at France. We started off to the right past Puerto Rico. Next time, we’ll have to go in the other direction as Patagonia is new and a couple of things there sound good.

Braised beef with rice in vegetable sauce was very tasty and worth the wait in line.

Wheat pasta gratin with mushrooms and Gruyere cheese very creamy and delicious. Also rather filling.

Our kids always like the Belgium waffle with strawberries and whipped cream.

Another night on the Magical Dining menu found us ordering Lobster and Shrimp Bisque at Eddie V’s on Restaurant Row. It had chunks of lobster, fishy/salty taste, but I am more used to New England clam chowder.

Excellent Scottish salmon with a few vegetable garnishes. We ordered a side dish of truffle mac and cheese, very tasty with crispy topping. Beef filet medallions very tender.

Dessert choices: dark chocolate mousse with whipped cream and fresh berries, Crème Brulé and Bananas Foster cake with butter pecan ice cream. Elegant, modern upbeat interior and excellent service. I would return here.

Epcot Food Festival Part One

Our first day at the Epcot Food & Wine Festival, it was hot and stifling out with little breeze. A cloud cover helped shade us from the sun, and for that much we were grateful. But it was still a chore to trudge all the way around World Showcase. It wasn’t too busy yet being a Friday so we didn’t have to wait in any lines for long.

We stopped by the Festival Marketplace to see the wares for sale. This building is next to Universe of Energy. A cooking demo was going on at the time. The Festival pavilion also hosts wine tastings and other events. There’s a section with chocolate sculptures hosted by Ghirardelli.

Starting at the Canadian end on day one, I sampled the smoked salmon with sour cream and chives and potato pancakes from Scotland while my husband had the vegetarian haggis. My dish was oh so yummy that I’d gladly get it again.

Next stop was France and their braised beef short ribs in cabernet sauce with mashed potatoes, a goodly portion and very tasty.

Since we’d eaten breakfast earlier at My French Café in Windermere, we got full easily. The food combined with the heat made us lose our appetites. We ducked into the Mexican pavilion and went on the ride to cool off. If you’re not familiar with this site, go inside Mexico and head all the way toward the back to your left. The ride entrance is there. It’s a leisurely boat ride like It’s A Small World with colorful Mexicans figures singing and dancing. Too tired to continue, plus it was raining by now, we headed back to our condo to relax.

Dining in Orlando

Our drive via the Florida turnpike north to Orlando this past weekend encountered an unexpected hazard. Lovebugs flew at us from all directions. They splatted onto our windshield and car grill and beset upon us when we stopped for gas. We’d never seen them so thick and omnipresent. In case you’re unfamiliar with this plague of beasts, these tiny mating critters leave a sticky residue that’s difficult to scrub away. When we know it is lovebug season, we’ll spray the car grill with Pam before hitting the highway. We didn’t expect them on this trip and got assaulted.

For our first night, we headed over to Bahama Breeze for drinks and appetizers to serve as a meal. We had coconut shrimp, chicken quesadillas and grilled salmon salad. A live musician sang Caribbean songs to steel drum music. Sitting outside, we enjoyed the tropical ambiance and the food.

Our meal the next evening at Ocean Prime took advantage of Orlando’s Magical Dining Month. Held every September, this event heralds fixed price meals at various fancy restaurants where normally an entrée would cost at least the amount of the special pricing. After shopping at Mall at Millenia and Nordstrom Rack earlier in the day, we were ready to relax.

The atmosphere at this restaurant on “Restaurant Row” at Orlando’s West Sand Lake Drive is modern and pleasant. The bar area is especially decorative and lively. But the hostess tried to seat us in a side section with no other patrons and not as nice a view. After I insisted we be seated in the main dining room, we got a decent table. Service was excellent. The waiter brought warm sourdough bread with butter while we perused the special menu. I had the house salad while the others in our party had the French onion soup. Both portions were quite large, and I was nearly full by the time our entrees arrived. My filet mignon was tender but had a bit of fat. A small amount of mashed potatoes and thin green beans were the accompaniments. We all had carrot cake for dessert and were so full that we took home a portion. This layered cake was too sweet and not as good as others. Overall impression? Lovely atmosphere but too high priced and not as good as The Capital Grille to warrant a return visit.

Coming Next: Epcot Food & Wine Festival

Orlando Revisited

Besides touring the World of Chocolate (see below) on our recent visit to Orlando, we couldn’t be in town without another trip to Disney on our annual passes. We went to Epcot and met fellow mystery author Ann Meier for lunch at Chefs de France. It was a delightful afternoon spent in company of a friend and surrounded by Disney’s lush landscaping.

Another day, we shopped at The Florida Mall. Our daughter said Nordstrom there is closing so we wanted to get in for their last sale. A lot of construction is happening as the entire mall is undergoing a remodel. The food court is supposed to be revamped and we noticed Saks is gone.

We still get lost in this place and have to rely on signs to tell us where to go.

Of course, our main purpose in coming was to celebrate our son’s birthday, and we did so at Hannibal’s on the Square in Winter Park. This restaurant is adjacent to Chez Vincent and owned by their chef, so we enjoyed a French menu with excellent service. The dish below is duck a l’orange. Before dinner, we strolled around central park and watched the Amtrak trains go by. Winter Park has its own ambience and we always enjoy people watching and browsing in the stores. Patrons spill from restaurants into the street at sidewalk tables, the aromas from within making you salivate as you walk past.

Another night we ate at Bosphorous Turkish Cuisine at restaurant row on West Sand Lake Drive. The lamb sis kebab was delish. So was the special bread and hummus appetizer. Our dining out didn’t end here. The following evening, we met cousins at Bahama Breeze for a leisurely seafood dinner. All in all, we had a great time and gained a few pounds.

World of Chocolate

On our recent visit to Orlando, we stopped by the World of Chocolate Museum and Café on International Drive. While waiting for our tour to begin, we studied the exotic chocolates offered for sale from around the world and the artistic creations inside display cases.

We couldn’t resist tasting some of the baked treats. This is our daughter’s portion of chocolate lava cake.

My husband and I ate our chocolate bombe filled with mousse so fast that I forgot to take a picture. It was heavenly! The café serves desserts along with coffee, tea and hot chocolate. It’s not for calorie watchers by any means. Put on your sweet tooth for this visit.

The guide began his tour amid rumblings of thunder and the pounding of rain from outside. This was appropriate as he led us into a faux rainforest to explain the origins of the cacao plant. Discovered by natives in South and Central America years ago, the plant was made into a drink that was bitter and spicy. Conquerors brought the plants to Spain where the resultant hot chocolate drink was consumed by royalty, and from there it made its way to France.

At some point, sugar was added to the mix. Cacao eventually made its way to the U.S. where Hershey grabbed onto it. Theobromine is an alkaloid found in cacao that is similar to caffeine. It is usually not present in white chocolate. Dark baking chocolate has the most content.

We saw sculptures made in Europe by artisans and crated to the U.S. for the museum. The intricacy of detail was amazing. You can smell the chocolate as you walk along.

Next the guide explained the chocolate making process while pointing out various pieces of machinery. They do not make the chocolate in front of you here so don’t expect a demo.

Finally, we were taken to a room full of display cases showing chocolate bar wrappers from around the world. Then we sampled various bits of chocolate that ranged from bitter to quite sweet.

Of course, we ended up buying a few bars each in the gift shop. Who could resist?

Jambalaya

The original inspiration for this recipe came from a cooking class I’d attended in New Orleans. Over the years, I’ve modified the recipe, preferring easy ingredients and preparation. So here is the Lazy Cook’s Jambalaya.

The Lazy Cook’s Jambalaya

2 Tbsp. oil
9 oz. package Perdue Short Cuts Original Roasted Chicken Breast
2-11 oz. packages Hebrew National reduced-fat beef franks
2-8 oz. containers fresh diced onions
2-8 oz. containers Trinity Mix (chopped fresh green pepper, celery, onions)
1 Tbsp. chopped fresh basil
1 Tbsp. chopped garlic
3 cups low-sodium chicken broth
2 cups uncooked jasmine rice
1 bunch green onions, chopped
8 oz. diced fresh tomatoes
1 cup fresh parsley, chopped

Cut up the chicken and hot dogs into bite-sized pieces. Set aside in different bowls. Assemble the other ingredients.

In a soup pot, sauté the franks in oil for flavor and then remove to bowl.

Next add diced onions, Trinity Mix, basil and garlic to pot and sauté until tender.

Return franks to pot along with chicken, tomatoes and green onions. Add broth and bring to a boil. Add rice, cover, and simmer for 30 minutes or until most liquid is absorbed.

Mix in parsley and serve. Makes 6 servings.

Add a fancy garnish if you wish. Serve with a side salad.

New York City: The Food

New York City: The Food

You can’t go to New York City without experiencing some of life’s best dining. The first night, we ate at the Fig and Olive. For appetizers, we got a bowl of olives and a mushroom dish that was heavenly. Our main meal was salmon with side dishes that were fairly meager. Don’t expect big portions here. The restaurant was crowded so we were glad we’d made a reservation.

Friday morning, we ate breakfast at Carnegie Deli. My daughter had a smoked salmon platter with a bagel and I had a boloney and egg omelet.

After spending half the day at the museum, we ate lunch at one of the Le Pain restaurants where you get served. We got like an appetizer platter of cheeses and such and nibbled from it for our meal.

Friday night was dinner with the mystery writers’ gang at Sammy’s Noodle Shop.

Saturday, I dined alone with the MWA folks at Bobby Van’s Grill. The filet mignon and side dishes were excellent.

On Sunday, we grabbed a bite to eat on our stroll to Rockefeller Center, shared a hot dog from a food vendor on Broadway, stopped in to the Hershey store to buy chocolate to bring home, checked out the Cellar at Macy’s, and had lunch in Lord & Taylor.

Their tomato soup was delicious, and it paired very well with a grilled cheese sandwich. Again, we were too weary and burdened down by our heavy coats to want to shop. I hated that part when I lived up north: dressing for the cold weather and dying from the heat when you went inside. I love the South, where you can run outside in short-sleeves for most of the year.

We bought croissants and Danish at Grand Central Station and a piece of chocolate layer cake at the Strip House to bring home.

Temptation abounds with the best looking pastries in New York wherever you go, cupcakes and crumb nuts (square donuts), fresh breads, and more. You could get fruits and vegetables at many of the markets, but I think we do better in Florida in this regard, at least in winter. I really liked the Hale & Hearty soup places in New York. That’s great for cold weather, not so much for their heat waves in the summer. So if you go to New York, leave room in your suitcase to bring home some treats.

Dinner on Sunday was New York pizza at John’s Pizzeria, just down the street from the Minskoff Theatre where we needed to go to see The Lion King. The medium size was more than adequate for both of us.

Finally, we left on Monday and ate breakfast at the airport. All that walking helped when I got on the scale at home. I’d only gained one pound. Now it’s back to a healthier diet.
