Imagine going to a gourmet restaurant, watching the cooks prepare your meal while following along with the recipes, and then eating a delicious four-course meal with wine pairings. This was our experience at Publix’s Apron Cooking School. It was a repeat visit for us as we greatly enjoy this experience. Tonight’s menu started with a crisp salad using curly lettuce with tomatoes, bacon, dates, and a warm walnut vinaigrette dressing. Dijon mustard gave this dressing a kick while maple syrup added a sweet element. Accompanying the starter was a Chateau St. Michelle Chardonnay. I liked this medium bodied white wine that sells for $12.99.

Cooking Tips: Cutting an onion releases an enzyme that causes tearing. To avoid this, leave on the root end. Remove the stem and peel, then slice through almost to the root. Turn onion and dice in the other direction.

To increase the juice from a fresh lemon, roll it on the counter first or microwave it for 8 seconds before squeezing.

Next came a yummy Portobello mushroom and barley soup. Including carrots, celery, and onion, this was so good that I still smack my lips at the remembered taste. Truffle oil added finesse. I loved the nutty texture of the barley. The accompanying wine was a Pinot Grigio by Ecco Domani. This was good but I liked the Chardonnay better.

Cooking Tips: Cut your vegetables the same size so they cook evenly together.

And—Garlic burns so add it last.

The main course was buttermilk meatloaf with stroganoff mushrooms and egg noodles.

This was perfection. The wine was a Santa Rita Reserve Sauvignon Blanc. I would have preferred a red wine with the meat dish.

Cooking Tips: Use a tube of tomato paste instead of a can. Then when a recipe calls for one tablespoon, you won’t have a whole can left over.
A roux helps to thicken sauces. It’s equal parts fat and flour. The fat coats the flour and allows it to be absorbed into the sauce. A roux can be light or dark.

Dessert tempted our palates with warm banana shortcakes. The sparkling wine was a pink Moscato. It was all right but I wouldn’t buy it. I love anything with warmed bananas so this dish hit the spot to finish off the evening.

Cooking Tips: Baking soda helps things spread; baking power helps them to rise (or is it the other way around?)

To roll out dough, put it between pieces of parchment paper. The dough is easier to cut if you refrigerate it first.

To whip cream, move your whisk back and forth rather than around the bowl.

Sugar in the raw is produced when sugar is spun at a high velocity and the molasses separates out. Molasses plus sugar equals light brown sugar.

**These tips are accurate to the best of my hearing ability and are subject to my interpretation.

What Readers Want

Florida Romance Writers was lucky to have Columnist Barbara Vey from Publishers Weekly speak to us about What Readers Want. Basically, they want authors to be polite and respectful toward them. They want their expectations to be met. And they want to know if you’ve reissued a book they might already have.

Readers may be disappointed if an author breaks her promise to readers. For example, the reader expects a certain type of reading experience, and the author takes a favorite series in another direction. This might sour the reader toward buying any more books in this series.

Readers may not like it when an author switches genres and the reader is expecting the same type of book as before. Either use a pseudonym or indicate by the cover that this is a different genre.

Readers aren’t happy when they buy a book only to find they already have it on their shelves, because it’s a reissue. Have it say so somewhere on the cover or inside the front pages.

Readers blame the author for anything and everything: bad covers, bad editing, etc. They don’t understand that publishers may be at fault. All they know are authors.

Readers hold authors in high regard and expect courtesy and respect in return.

Avoid politics online (and religion) or you’ll risk alienating your fans.

Readers who post reviews shouldn’t give away significant plot points.

To gain reader interest, Barbara advises authors to interact online with readers, put out questions, chat as though with a friend, and be yourself.

32 Self-Editing Tips for Writers

I am involved in my own revisions for Warrior Lord, book #3 in the Drift Lords series. This means two read-throughs. The first round is for line editing and catching repetitions. The second round is to read for smoothness, final word tweaks, and consistency. Then I’ll send it in to my editor. When I get it back and read through it again, I am always appalled at the number of things I still need to change. This proves revisions are never done. You have to call a halt when you feel you’ve done your best. So what should you do during your self-edits? Use this advice as a guideline.

Have an identifiable main character. With multiple viewpoints, you run the risk of detaching your reader unless you go into deep viewpoint with each switch. Have one main character with whom we can identify and cheer on, otherwise why should we care what happens?

Make your protagonist likeable. Have you watched TV shows where none of the people appeal to you? Would you continue watching it? Even if you employ an anti-hero in your story, give him a reason for his anti-social behavior. He has to be redeemable or sympathetic in some way.

Motivate your characters with clear goals. If they don’t care what’s happening, why should your reader? Make sure your character’s goals are obvious up front. Why is this important to him? What is he doing to make it happen? What’s stopping him? What stakes are involved?

Invest your characters with attitude to give them a distinctive personality.
NO: I’m fine, thanks. YES: You really wanna know? OR: It’s none of your business, dude.

Keep description within the viewpoint of your character
. Similes and metaphors should be within her frame of reference. Hairdresser: as limp as a strand of shampooed hair. Or: as tight as a newly permed curl.

When you’re in deep viewpoint, use pronouns rather than the character’s name. Keep viewpoints distinctive. Use a new paragraph with a space break when you switch heads.

Avoid flashbacks and backstory. This is probably the most common mistake of newbie writers. Leave the past in the past unless it’s important for your current story. Keep the action moving forward. Drop in backstory into dialogue or relate it in brief thoughts during action scenes. Less is better. There’s nothing faster that will disengage your reader and kill the pacing than long passages of backstory or flashbacks suddenly inserted into the middle of a scene.

Show, don’t tell.
Show me your character’s emotions. Don’t tell me about them, or I won’t be engaged as a reader. NO: She felt afraid. YES: Ice gripped her heart. NO: He was angry. YES: He slammed his fist into the door. Physical reactions and nonverbal clues indicate emotions. Without these, you’ve written a cardboard character who I can’t relate to as a reader. Also, don’t have the hero only perform action stunts and hold terse dialogues. Show me how he reacts internally. Introspection is important to helping us relate to him, although paragraph after paragraph of angst can get tiring. Just don’t leave it out or I won’t get a feel for him as a person.

Dialogue should have a purpose. Conversations should advance the plot or reveal character. Know going into a scene what you mean to reveal. If your characters are aimlessly yakking about their love lives or what they’re cooking for dinner, cut the conversation. Don’t ramble. Have a snappy conversation filled with innuendos and hidden meanings. And remember to include your protagonist’s emotional reactions. Also, don’t overuse dialects. Sprinkle in some foreign or slang terms to give the flavor without making sentences hard to pronounce.

Beware of talking heads.
Lines of dialogue need to be broken up by character tags, such as sensory descriptions or action. Remember to include emotional reactions and introspection so we can see what’s preying on your character’s mind.

Eliminate most substitutes for said along with adverbs that describes speech. NO: I love it, he chortled merrily. YES: I love it, he said with a chuckle.

Replace he/she said with character tags. Use action as an identifier and bring in the five senses whenever possible. NO: “I suppose you’re right,” she said. YES: “I agree.” Her nape prickled as though Grace’s words had prophetic power.

Avoid long paragraphs of exposition. Show us the scene unfolding from the character’s viewpoint. Otherwise, do these passages really need to be there? Make the reader feel what your hero feels. Don’t just tell us what’s going on.

Tighten your sentence structure by replacing phrases with precise words. NO: the light of the boat YES: the boat’s light NO: He ran down by the terrace and out toward the lake. YES: He sped past the terrace toward the lake.

Replace passive verbs with active tense. NO: The slaves were slain by lions. YES: Lions mauled the slaves. NO: His forehead was heated by the sun baking overhead. YES: The baking sun heated his brow.

Replace walked and went with a more visual word. She shuffled toward the door. He raced down the street. He sprinted across the yard.

Dangling Participles. Learn by example: NO: Glancing into the rearview mirror, her breath released upon noticing the coast was clear. YES: Glancing into the rearview mirror, she released a breath upon noticing the coast was clear.

Gerunds. Beware of ing phrases that are illogical. NO: Flinging the door wide, she stepped inside the darkened interior. YES: She flung the door wide and stepped inside the darkened interior.

Avoid weak phrases like seemed to, tried to, began to. NO: He seemed to want her input. YES: His smile encouraged her to speak. NO: She tried to tie the knot, but it slipped through her fingers. YES: As she fumbled with the knot, the rope slipped from her fingers. Also avoid unnecessary phrases such as she realized, she figured, he decided, he watched, he thought.

Be realistic about meal and work hours.

Avoid weak verbs: is, was, are, were, there was. NO: There was water on the window. YES: Water droplets beaded the window. NO: His pulse was racing. YES: His pulse raced.

Avoid negatives. NO: He would not wait any longer if she didn’t appear. YES: He’d leave if she failed to show up.

Delete redundancies. NO: sat down YES: sat NO: He thought to himself YES: He thought. BETTER: eliminate he thought if you’re in his viewpoint.

Check for repetitions: Most of us subconsciously overuse a favorite word. Be alert for these when you read through your manuscript. (I just counted how many times I use the word “just” here, and it’s 9 times. I’m guilty!) Avoid the same phrases or words in consecutive pages. Watch out for repeats of the same information in conversations or in a person’s thoughts.

Eliminate the word “that” where not needed.

Remove qualifiers that weaken your prose, such as: very, rather, quite, really, just, awfully. NO: I remembered that she was really nice. YES: I remembered how her smile lit the room. NO: It was very hot. YES: The heat made my skin itch.

Beware of flying body parts.NO: Her eyes flew across the room. YES: Her gaze flew across the room. NO: She threw her hands in the air. YES: She raised her arms.

Be specific: NO: She passed a clump of flowers. YES: She passed a clump of red tulips sprouting from the ground like supplicating hands. NO: It had been a hard day. YES: Her body sagged as though she’d run a marathon (cliché alert?).

Learn correct spelling and usage: their or they’re; it’s or its; lay or lie; you’re or your. This is fundamental, and there is no excuse for getting these wrong.

Use descriptive detail only when it enhances your story. Too much description can slow pacing and lose the reader’s interest. However, whenever you describe a scene, remember to use the five senses. If you want to engage the reader, include specific sensory details.

Avoid clichés like the plague. If you spot one during revisions, go back and replace it with something more original. NO: He wore a scowl like a cloak. YES: He wore a scowl like a seasoned samurai (and he’s Japanese, so this fits the frame of reference).

Go for strong endings at ends of sentences. Don’t end sentences on a preposition. NO: I didn’t know what he was waiting for. YES: I didn’t understand why he waited. NO: He stared in horrified dismay at her. YES: He stared at her in horrified dismay.

It helps if you put aside your work for several weeks after completing the initial draft. Coming back to it with a fresh perspective will allow you to catch things that might otherwise slip by. Working off a hard copy and reading dialogue aloud are other techniques to use. You want to polish your manuscript until it figuratively sparkles and then move on to the next story.

Reader Reviews

When you finish reading a book, do you write a brief review and post it online? If your answer is negative, why not? Do you feel you have nothing to say? Are you afraid your opinion won’t count? Is it too much bother?  Bookshelf

Reader reviews count a great deal to potential book buyers. When you’re thinking of ordering a book, do you go to the virtual bookstore and read customer reviews? I know I do. It’s possible that the more customer reviews on an Amazon page, the more chances of Amazon’s algorithms picking up the title and including it in their promotion, “If you like this book, you might like…” This recommendation is of tremendous help to authors. So are five star reviews. But be honest in your opinion and assign however many stars you feel is appropriate. Just please don’t trash someone’s work. If you don’t like the book, leave off your opinion. Nothing hurts worse than seeing someone give my book one star and condemning it. Maybe it just wasn’t their cup of tea and another reader will love it.

So how do you write a review? Start out with a blurb about the story. Pretend you are summarizing the tale for a friend, but omit any critical plot points that may act as spoilers. Then mention what you liked about the book. The exquisite setting details? The engaging characters? The non-stop action, or the quirky sidekick? Surely you can find something good to say. End your review if you can with a quotable line encapsulating your opinion. This may range from “A charming historical mystery that will sweep you away to the Victorian era” to “Starships, space battles, and snarky sidekicks…what’s not to like about this action-packed sci-fi adventure?”

Since the New Year is upon us, hereby resolve to start writing reader reviews and posting them online to support your favorite authors. Where to put them? Here are several sites where your opinion matters.

Goodreads is a popular reader site where readers review books they’ve read, file these reviews on virtual bookshelves and create genre lists. Readers participate in group discussions, offering each other recommendations. A good review here really helps, and so does a recommendation in any of the groups! You can also look for book giveaways under Explore to get a taste of new releases. It’s easy to register for a free account. Then you just go to My Books, click on Add Books, and type in the book title. The book should pop up. Click on it and give it a star rating. Your opinion as a reader truly counts now more than ever, with professional reviews almost impossible for authors to get on their own, reviewers swamped with hundreds of titles, and the days of bookstore browsing severely diminished. Word of mouth is critical, and this is where you come in. Offering positive reviews and recommendations online of books you’ve read is one of the best forms of support you can do for authors. Consider yourselves our street team and get involved.

BookBub is another site for you to follow authors and post reviews. The idea is to share your favorite reads and support the authors at the same time.

When Are Revisions Done?

Newbie writers often ask, how do you know when to stop revising and send in the work? There’s no easy answer as each of us goes through our own self-editing process. Revisions are never done. Every time you read through your work, more things pop up to fix. So when should you quit? When the story is as good as you can make it for now, and you’ll plotz if you have to go through it one more time. But all is not lost. You’ll get another chance to make corrections and tweak your phrasing during the editing phase.

Finishing your manuscript and doing second or third drafts is only part of the equation. Once your story is finished for good, you need to go back to your synopsis. Why? The story probably branched out in new directions since you began, and you need to update this important marketing tool.

You should also check through the submission guidelines and format your work accordingly. Different publishers prefer different fonts and line spacing. So get it right before you submit anything.

Check your front and back end materials to make sure everything is there. Besides the title page, in the front may go any endorsements you’ve gathered, dedications and acknowledgements, world building details like maps or casts of characters. At the end go your biography, author’s note if any, and any bonus materials like recipes in a culinary cozy. Again, see if your publisher requires anything else.

Once you have accomplished all these tasks, then you are ready to submit. Does the publisher want you to attach any ancillary materials, like cover art sheets or permissions or cover copy blurbs? This may come before or after a sale. Be certain you have these forms filled out.

Then write your cover letter and send the submission.

Here’s a quick checklist:

· Proofread your final draft for timeline consistency, character continuity, repetitions, word choices, spelling.
· Verify any research as necessary.
· Check all loose ends to make sure you’ve solved them by the story’s finale. You may want to review your plotting notes to see if you have left anything out.
· If a series, include a hook for the next story.
· Write a reader discussion guide during your final draft.
· Jot down blog topics for your blog tour.
· Rewrite your synopsis to match the finished story.
· Format your manuscript according to publisher guidelines.
· Prepare requested ancillary materials to attach with your submission.
· Submit your work and cross your fingers.

I am in this phase now which is why I’m not blogging too often, posting on FB, etc. Getting the book done amidst the holiday frenzy is taking my total concentration. I’ve gone through the manuscript, so now I have to format it to the publisher’s guidelines and fill out the required forms. Then I’ll send my baby out into the world.

Thanksgiving Weekend

How was your Thanksgiving and Black Friday? Here I am at the salon, trying a new hairdo in preparation for the holiday. Usually my stylist uses a curling iron but this time she tried rollers.

Turkey Day arrives, and I get my main dish ready to put in the oven.

Several hours later, it’s done. Maybe it didn’t brown as well as I’d like on the sides, but the thermometer tells me the inside is cooked.

Our table is set. We’re having a quiet holiday this year, which means we can relax and enjoy each other’s company in private. The guys watch sports on TV until it’s time to eat. We’re having traditional fare of roast turkey with gravy, sweet potatoes with marshmallows, broccoli cheese casserole, and jellied cranberry sauce. No stuffing; our kids don’t like it. Pumpkin pie from Costco and homemade brownies for dessert.

Our stomachs are satisfied and our blood is suffused with sufficient fat and sugar content for the rest of the month. We go to bed in anticipation of the shopping frenzy on Friday.

In the morning, we head to Sawgrass Mills Mall. We find parking in a relatively unpopulated area that we favor and stride toward the doors. Sales beckon, and we emerge a few hours later carrying packages. I bought a new pair of NYDJ black jeans at Nordstrom Rack for half the price of what I’d pay for them in the department stores. Worn out, we went home for a nap.

Today we may go to a park or do spot shopping but we’re not looking for anything in particular. I’ve already bought some of my holiday gifts and would rather go back to the stores on a regular weekday. Tonight we’ll take a break from turkey leftovers and dine out at a favorite restaurant.

Tomorrow is my birthday. That means brunch and a happy day spent with family, the best gift in the world.

St. Kitts

We took tour KT67 Fairview Great House and Beach. First we drove in an air-conditioned bus through the historic streets of Basseterre. Lower levels of structures here are built with volcanic rock to guard against fires, which destroyed much of the town in the past.

Dating from the 17th century, these interesting buildings and monuments offer a glimpse into history. This is a substantial town that invites exploration. Next we drove to Fairview Great House, a former hotel that stands on a hill with an expansive view.

Outside it has a swimming pool and a covered outdoor terrace with a bar, while indoors is the dining room, men’s study, ladies parlor, and more. Upstairs you can see a sample bedroom with a private lavatory—an ancient toilet and a basin with pitcher only. On the grounds is evidence of former stables and a bathing room with a stone bath. A gift shop is down below, next to a separate building that housed the kitchen. This was a fascinating glimpse into a bygone era. The so-called botanical garden was mostly a grassy area with labeled trees.

From here we visited Frigate Bay Beach after a winding drive through the hills. This site boasted an expensive sit-down restaurant: $16 for a club sandwich or a burger plus 22% tax and gratuity. Chair rentals cost $10 each and we were only there for one hour. A large covered building held a bar and the costly restaurant, plus it had a pleasant sitting area under cooling ceiling fans. It’s a lovely beach if you want to soak up the sun and go for a quick swim, but it would be nice if they had a reasonable snack bar. While the beach is beautiful, it seems like a rip-off with the high prices and lack of other amenities. My caveat: bring your own snacks. You get a free fruit drink with the tour. If you want to sit in the shade, you’ll have to pay more for an umbrella or find a seat inside the structure where you can read a good book or admire the scenery.

Back in town, we went shopping near the pier. This is a good shopping stop although St. Maarten is still better for jewelry and electronics. You could keep busy browsing the shops along the pier, eating lunch in one of the restaurants, and meandering into the historic parts of Basseterre. If you do go on a tour, a couple of hours here is all you need to pick up souvenirs and gifts.

We took the ship’s tour AN48 Antiguan Experience. Antigua is a dry island compared to Dominica, where it actually rained in the rainforest and the shrubbery is lush with tropical foliage. Here cactus grows and the hills are lower although they still offer scenic views.

After driving in an air-conditioned bus through the hilltops, we arrived at a private home open to visitors. Inside were artifacts dating back to the 16th century collected by former owners, relatives of the current occupants. Their family owns cattle raised for meat. We saw sheep without its coat that looked like goats. The way to tell the difference? Look at their tails. I think it was the sheep whose tail is down, the goat whose tail is up? Anyway, the lady owner said that whenever the volcano at Montserrat blows, they get ash blown in. We toured the house, peering at the fascinating museum-quality relics. This lived-in home gave us an idea of how a well-to-do family might live on the island. It was a peaceful, comfortable ambiance.

From here we drove to a pineapple farm where they grow a small, sweet variety called gold pineapple. It was pretty hot out as a woman explained the growing process.

A stop at a beach came next. I didn’t care for this portion because there was absolutely no shade. It was a fairly deserted beach, but there were restrooms and we were provided a barbecue lunch. We rented chairs for $3 each but there weren’t any umbrellas. Ants crawled on the ground and perhaps got into my shoes because the next day I got a couple of bites on my foot. I tried to go in the water here, but there was a drop-off not far from shore so that I’d have to climb over the ridge to get back. And the undertow was extremely strong. I splashed myself but then scampered out onto the sand. We broiled in the heat until lunchtime. Seats at tables were arranged under an awning but it was still hot. We ate barbecued chicken with beans and rice. Then a lady entertained us with poems and song while I fumed impatiently to go back to town. This dragged on too long. Finally, we got back into the bus and made it to the pier. There are shops lined up here where we browsed before gratefully reentering the ship.

The house might have been fascinating, but I was less than thrilled with the beach portion of this excursion. I don’t like it when the tours take you to a deserted beach. Maybe you’ll love it if you’re from up north, but I prefer a more active beach site with restaurants, gift shops, and facilities. Here you’re stuck waiting for the driver and others on the tour, whereas if you’re in a better location, you can amuse yourself at a bar or a shop when you get tired of the sun.

We did the Royal Caribbean ship’s excursion RO32 called Cooking Caribbean, Rum, and Nature.

An air-conditioned van drove us through a poor section of town with ramshackle buildings to a mountain road. We drove up a steep, winding incline. It was a bumpy ride where we jostled against each other, swaying left and right around hairpin curves. It appeared to be one lane but served as a two-way road.

We climbed up and up into the rainforest, spotting banana plants, papaya trees, clumps of bamboo, colorful crotons, broad-leafed plants and reaching vines. Wealthier, substantial houses dotted the hillside. We arrived at a lovely home and were guided out back to an outdoor kitchen under a covered patio. The view of the cloud-shrouded mountains from this location was spectacular.  Be aware that it actually rains in this rainforest! Showers swept in but quickly passed. While sipping a fruit punch, we admired the flowers, shrubbery, and distant vistas.

Then we were summoned to take our places in the outdoor kitchen. We stood in a semicircle around a broad counter. There were 15 people in the class. Three lady cooks introduced themselves and gave us each a yellow apron to wear.

First on the menu was marinated, sautéed tuna. This came out a bit chewy and not to my taste. Next we cooked red beans and rice that was very good. The cooks used fresh vegetables, fruits, and herbs like lemongrass, many of which were obtained from the grounds. We made a salad with homemade dressing and then did fried coconut-dipped plantains. I mixed the batter which consisted of one can of coconut milk, two eggs, and 1 cup flour. Everybody participated. We had grapefruit with rum sauce for dessert, and a rum punch made with West Indies pumpkin.

We were promised recipes via e-mail but so far they haven’t arrived. There was a tip bottle put out at the end. A long table was set for the tour participants and we ate buffet style. It was a lot of fun, and I’d suggest this as one of the best, most unusual excursions if you’re into cooking. What would I change? I’d suggest they put stools around the counter so we wouldn’t have to stand for so long. Also, they should hand out copies of the recipes. I doubt we’ll ever get them, so you might want to take notes if you do this tour.  Our stomachs satisfied, we went back to the wharf in Roseau to browse the native market.

Philipsburg, St. Maarten

On previous tours of this island, we visited the French side of Marigot. It’s a tedious drive across the island on the only road which means it’s usually congested. We didn’t find the expensive restaurants and European cafes to excite us when the ambiance in Philipsburg is charming enough and a lot closer. That prior ship’s excursion also took us to a not-so-nice beach near a nudist site. Not our cup of tea.

So this time, we went shopping in Philipsburg, capitol of the Dutch side, after taking the water taxi for seven dollars (round-trip fare) from the pier. There are shops near the ships that are adequate representations of the ones downtown, but it’s much more fun to go into the town center and stroll through the quaint streets.

A beautiful beach faces the water in Philipsburg that is fronted by restaurants and shops. We ate lunch at the Barefoot Terrace. This restaurant is to the right after you dock downtown from the water taxi. I had coconut shrimp with French fries, coleslaw, and sautéed plantains for $14.95. The St. Maarten Rhumba drink cost $6.95 and packed a wallop. After I went back to the ship, I had to take a nap. Holland House is another restaurant we’ve enjoyed with a water view.

I can recommend my favorite stores here if you’re in the market for baubles. Otherwise, souvenir stores are plentiful. I like the Guavaberry place for a taste of the island’s specialty liquor. If you tire of shopping and aren’t on a tour, you can rent a beach chair for $5 and enjoy the water. Bring cash for the water taxi, food, and incidentals. Philipsburg is my favorite port! Shopping, restaurants, and a free beach–what more could you want?
